Is it possible to have the Ads on my Top Site List subject related, ie about Daoism?

The only way to influence the ads is by the words that appear on the page. For example including (but not spamming) words like "tao", "taoism", etc. can assist the ad targeting. Once this is done, the ad system will need time to re-read your pages, and adjust targeting, is possible.
